March 2017. Anji county, Zhejiang province. The reason it bears the name Anji White Tea even though it is green tea is due to the cultivar, Camellia sinensisvar. sinensis "Bai Ye1". This tea is prized for its sweetness and high amino acid content, which gives the tea a rich mouthfeel and very calming effect. Amino acid are utilized to make crucial substances within a body, such as enzymes, that support biochemical reactions; hormones that influence body metabolism; hemoglobin, which carries oxygen through the body and antibodies that are infection fighters. To make this tea, fresh leaves are withered, pan-fried, shaped and then dried.
